We keep coming back to Wilton Benitez for a reason.
For more than 26 years, Wilton has been growing coffee at Granja Paraíso 92 in Cauca, Colombia. His approach sits somewhere between farmer, scientist and relentless tinkerer - pairing meticulous growing practices with a microbiology lab, custom-built equipment and an incredible amount of control over fermentation.
And the coffees are plain ridiculous.
At around 1,900 MASL, Granja Paraíso 92 sits in the volcanic soils of Cauca. Wilton uses controlled bioreactors, specific microorganisms and close monitoring throughout processing to build coffees that are intensely expressive, but still precise and clean.
The Process
This is where the fun begins.
P-07 goes through a two-stage anaerobic fermentation using a selected yeast strain, followed by Wilton’s signature thermal shock process: carefully controlled hot and cold water used to help shape and amplify the coffee’s final flavour.
In the cup, it's sweet, floral and expressive. It opens up beautifully as it cools, bouncing between delicate florals and big tropical fruit.
