Back for a second feature as it's so dang good, we stoked to share the San Cristóbal with you (again)! We initially brought this one in last September to be featured in our Brighteous Brew line, and were so impressed by it, that we included it in the Glitter Juice blend. Unfortunately, container delays has our next Brighteous Brew sidelined for the time being, so we figured we’d throw it back on feature until the next one arrives!

Brewing this one has us thinking again of light pastry sweetness (snickerdoodles, to be specific), balanced by white chocolate & almond. If you’re looking for a coffee that’ll shine on its own, or accompanied by cream & sugar - you’d be wise to give this one a go!

📖  Story 

From Mountain Coffee:

Coffee is Chiapa's most important commercial crop and has a long history in the region. The first crop was introduced in 1846 by Jeronimo Manchinelli, who brought seedlings from Guatemala to many  farmers  followed  and  coffee  growing  spread,  becoming  a  significant  source  of  income  for  small producers. San Cristobal de las Casas improved their processing over the years which resulted high-quality coffee, with delicious notes of caramel, nut, and chocolate.

Producers here have learned how to process their coffee to ensure quality. Only the best cherries are selected for the specialty market. After depulping the coffee ferments for 12 to 17 hours before being washed and dried on small drying patios next to farmers’ homes. 


San  Cristóbal  de  las  Casas  is  a  Pueblo  Mágico  in  Chiapas.  “Pueblo  Mágico”  (Magic  Town)  is  a  designation  created  by  the  Mexican  government  to  recognize  sites  full  of  symbology,  legend,  transcendent history, and that highlight the best of the country’s national identity. San Cristóbal de las Casas is all of this an more, a colorful town with magic in every corner. It is considered a cultural capital and is one of the most important tourist destinations in the region.
