Brighteous Brews are our take on 'house coffees' - but we like using made-up words that are fun to say and reflect our west coast surfer values. So, Brighteous Brews were born.

Production


Coffee is Chiapa's most important commercial crop and has a long history in the region. The first crop was introduced in 1846 by Jeronimo Manchinelli, who brought seedlings from Guatemala to many farmers followed by a large growth in coffee growing. Coffee quickly became a significant source of income for small producers. San Cristobal de las Casas improved their processing over the years which results in the high-quality coffee the region is producing today, with delicious notes of caramel, nut, and chocolate.

Producers here have learned how to process their coffee to ensure quality. Only the best cherries are selected for the specialty market. After depulping, the coffee ferments for 12 to 17 hours before being washed and dried on small drying patios next to farmers’ homes.

San Cristóbal de las Casas is a Pueblo Mágico in Chiapas. “Pueblo  Mágico” (Magic  Town) is a designation created by the Mexican government to recognize sites full of symbology, legend, transcendent history, and all that highlights the best of the country’s national identity. San Cristóbal de las Casas is all of this and more, a colourful town with magic in every corner. It is considered a cultural capital and is one of the most important tourist destinations in the region.

Coffee Grinding Policy

** We charge an addition .50c Grinding Fee per bag for coffee that needs to be pre-ground. 

But hang on a sec!

We'd be remiss if we didn't take a minute to mention WHY we think you should track down a grinder to enjoy the best cup of joe possible. When coffee is ground, the stuff inside that makes it unique and amazing begins to degass. The longer your coffee sit's around ground, the more it degasses and becomes a ghost of the beautiful bean it once was. Of course, there are times when grinding to brew isn't possible, you do you man - we figured we'd drop some knowledge in the event it provides a bit of info that ultimately leads you to a better brew!
