The way this coffee cools has us head over heels for its unique flavour expression - moving from delicate melon just after being brewed, to jammy jamminess after just a few minutes. If we can offer a bit of advice with this one, try brewing this coffee at different temperatures. In our experiments, we found that a hotter brew temperature (~100°) yielded a sweeter, cleaner Melony cup, whereas cooler temperatures (~95°) were overwhelmingly Jammy McJammerson.

// THE STORY:
The Thiriku factory was registered in 2000 and is located in the heart of Nyeri county. Cherries from this factory have been carefully hand-picked and sorted for ripeness by the farmers before going into production. Cherries are then de-pulped and graded by density before going into fermentation under closed shade. After the coffee has been graded and washed, they are left to soak in water from the Gatomboya stream. This coffee exhibits intensely sweet and vibrant qualities that are unique to the highest performing coffees in this region.
